This week’s recipe is an Oatmeal Chocolate Chip cookie. The cinnamon and chocolate are a wonderful combination with the texture of the oats. This is a real treat for adults and kids alike. Choose good organic ingredients when baking and preparing foods. A good health food store will have wonderful organic brown sugar and chocolate chips.
1 ½ cup oat flour
2 cups rolled oats
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1 teaspoon baking soda
½ teaspoon baking powder
1/2 teaspoon sea salt
1 cup (2 sticks) unsalted butter
1/2 cup turbinado sugar
½ cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups chocolate chips
Preheat oven to 350 degrees. Line or spray a cookie sheet.
Melt the butter and set aside. In a medium bowl mix the flour, rolled oats, cinnamon, allspice, baking soda, baking powder and sea salt. In another bowl whisk together the melted butter, turbinado sugar, brown sugar, eggs and vanilla. Add the dry ingredients to the wet ingredients and mix well. Stir in the chocolate chips. Place the dough in the refrigerator for 1 hour. Use a teaspoon or 1 oz ice cream scoop and place on a sprayed or lined cookie sheet. Bake for 10 to 12 minutes. Place on a cooling rack. Store cookies in an airtight container.
