This week’s recipe is a white bean and sun dried tomato dip. This makes a wonderful dip with pita bread or whole grain crackers. I also use this as a spread with a wrap or sandwich. You will love the flavor of the sun dried tomatoes and basil with this. Enjoy!
1 ½ cup cooked white beans (great northern or canelli)
1 small shallot, peeled
2 garlic cloves, peeled (optional)
¼ cup sun dried tomatoes in oil, chopped (about 8-9 tomatoes)
1 teaspoon sea salt
Pinch red chili flakes
3 large fresh basil leaves
1 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
Place all ingredients in a food processor or blender. Process or blend on high speed until mixture is a creamy, smooth consistency. Taste for salt and pepper.
